Mince - lamb or chicken - 500 gms
Parsley/ coriander leaves -1/2 cup finely chopped
Egg - 1 medium - beaten
Lemon juice - 1 lemon or as needed
Green chilli - finely chopped
Olive oil or butter - 2 tsp ( if using chicken mince)
In a bowl put together
Onion powder - 1 1/2 tsp
Garlic powder - 1 1/2 tsp
Ginger powder - 1 tsp
Paprika powder - 1 tsp
Salt - 1 -2 tsp ( to taste )
Dry Mixed herbs 1/2 tsp ( optional)
Breadcrumbs / panko or homemade
Oil to grease your hand or water to moisten whatever works for you.
In a bowl put the mince , sprinkle the salt evenly, break in the egg, parsley or coriander ( up to preference), green chilli (deseeded if you prefer less heat), half the lemon juice. Oil or butter if using the chicken mince.
I sometimes leave it out. It depends on how you cook the patties .
Mix it in with a wooden spoon or your hands.
Now sprinkle the spice mix and knead it well till the mince isn’t sticky and all the spice mix looks well blended into the meat.
Do a test. Pinch a small marble size mix and fry it to check seasoning, adjust if anything is needed. Lemon, salt etc.
If all is good then set it aside.
Let it rest for a few minutes before shaping them.
Meanwhile wash your hands and get the next part ready.
You will need a tray, parchment paper.
In a bowl crack the egg , pour 2- 3 tsp water into it and beat it well.
In another wide bowl keep breadcrumbs ready season with salt and pepper.
You can season with whatever you choose.
Now moisten your hands with water or use oil, shape the burgers. The size depends on how big your slider is going to be. Don’t make them too thick. I would say 6 pcs . Line them up. flatten it gently and make sure its even on all sides and dip in the egg mix then drop it on to the bread crumbs. Using your other hand coat evenly on all sides. Lay it on the parchment.
Repeat with all.
You don’t have to crumb them if you want to and skip that step and just shape it and lay on the parchment.
Let it rest for a few minutes .
Pan fry. and serve.
I used these as burger patties. served it with a slice of smoked cheddar a spicy sauce in between warm potato bun.
